Why can I not choose for subscription or mandate?

When the options "Subscription" and "Mandate" are not possible as payment link type, the required payment methods are not yet activated in your Mollie Dashboard. To use recurring payments you will need "SEPA Direct Debit" and/or "Credit Card". You can activate these payment methods in your Mollie account.
